Ответитьfor those without ricotta I modified this recipe. Use 60 grams of shredded cheese, i used a tasty (aged/cheddar like taste, you could use a blend of mozarella as long as it melts and kind of solidifies when room temperature) and 40 grams weight of heavy/full cream (whipping is what i used because it is high in fat), microwave or melt in a sauce pan for about 50 seconds. let it cool it will have the same texture and consistency as the melted ricotta. i also used 50 grams of almond flour, because i was worried about setting with the cream and the cheese i also used 5 grams of gelatine instead of the 3, no changes to the recipe except these. bon appetite!

ОтветитьWhy is the cheese needed in this recipe? It can not be just almond flour and eggs just like regular pasta is made with regular flour and eggs? I probably could add some xanthan gum to give it the elasticity.

I wanted to test out, warming up just the pasta by itself. I had a little bit of water in a frypan and moved it around for just a minute or two. It was perfect.
So, if for some reason you don’t want to have a sauce on your noodles, (we were going to have pesto), then this is a great way.
My husband thinks that these taste like egg noodles. And we are all excited to have them tonight.
I’m going to test out the agar agar amount today. I watched the video at modernist pantry. They said to use .75% or to 1% of the weight of the recipe. So I’m going to try making one batch and splitting the batter.
Trying different amounts of agar agar. I don’t wanna ruin three eggs The cream cheese.
UODATE: One percent seem to be more than you were asking for your gelatin. So I just did a half teaspoon of agar agar and I’m doing the whole thing. If it’s a bust, it’s a bust. But that’s what happens in an experiment
I’ll send you some pictures. I’m not sure if I’m using too much or too little agar, agar. But I do have noodles!

ОтветитьI made the coconut dairy-free version yesterday. Unfortunately, it didn't turn out well. The pasta broke easily. Maybe the cream cheese is a necessity.
