I've seen him in roles in several movies over the years. He's always a memorable character regardless of the role he plays. Tim Burton really could not have cast a better Gomez than Luis Guzmán. And Jenna Ortega just amazes me in the roles I've seen her play. I was really hoping they'd do an interview or spot together. And what brings people together better than food!? With my love of those dishes, you'd think I should have been Latino! I want the recipes for both dishes the two of you enjoyed! And because Luis asked so nicely.... :D

This is a simple casserole I make that is easy to prep, filling, and versatile! Such a "comfort food" plus a lot of room for variation if you wish to change things up to fit your dietary needs. Substitute, add, subtract to your heart's content!

NEED:
Large 13x9 Casserole pan or other cookware
1 x Stick of butter (melted)
3 x Large boneless, skinless chicken breasts (cooked with bay leaves, chopped celery, salt, pepper and then shredded)
(Or other protein source)
1 x Small bag of frozen vegetables such as peas & carrots (I also add frozen corn to mine as well)
1 x Red Lobster Cheddar Bay Biscuit Mix (size makes 10 biscuits)
2 cups of milk (I, myself, use almond milk as I am lactose intolerant)
2 cups of chicken (or vegetable) broth

* Preheat the oven to 350 degrees
* Add melted stick of butter to casserole pan
* Spread a layer of shredded cooked chicken
* Scatter layer of frozen vegetables over the top of the chicken
* Mix biscuit mix and milk well; save season pack for later
* Pour over the dish
* Mix chicken broth with can of cream of chicken soup til well blended
* Pour over the dish
* Scatter seasoning from biscuit package over dish

Cook for about 45 minutes (I was told you cook it longer-- like 75 minutes-- on the west coast) or until the biscuit-portion is done and a toothpick can be removed cleanly. Serve hot!
