ОтветитьHi Aya! I see al ot of genoise recipes use butter but your recipe uses oil (which I love, because that makes it dairy-free!) I'm wondering what the difference is? Does it affect taste and/or texture?

ОтветитьOne tip I can give when you have a very flufy and light batter where you have to add liquids to.
Take a couple tablespoons of the batter, mix it with the liquid (in this case the oil and milk) and put it back in the big bowl of batter. It will incorporate much easier and you don't lose as much air bubbles and your batter stays fluffy.

ОтветитьHi from the UK. Thank you for this video as it is the fluffiest sponge I’ve ever seen. I have been making a fatless sponge for years now very successfully but it wasn’t fluffy enough, then you showed how to make the bubbles smaller by slowing down the mixer before whisking again. I have never added the oil mix like you did so please can you answer 2 questions? 1. What did that oil mix do to the cake? And 2. Can I use coconut oil please?
