With the pancakes; there really isn’t a ‘recipe’ just add wet ingredients until you get the consistency you like. I’ve also subbed out the liquid for some Greek yogurt and water to thin it out. The batter is technically just a base, a choose your own adventure if you like :D

ОтветитьI got so excited to see gluten free kodiak cakes, but when i went to buy them saw they are made out of oats. 😭 Oats are not considered gluten free in Australia.

ОтветитьAs someone who has eaten Kodiak cakes for several years, I I was ready to yell at the phone don’t put any more batter in there it’s supposed to be runny. You won’t like it with all the batter. And then I was just like trust the process. They will figure it out.

ОтветитьWe bought Kodiak cakes at Grocery Outlet this summer and LOVED them. Got great consistency using the directions on the box (like, frothy/foamy batter that came out perfectly crispy/cakey in hot butter). I haven't seen them in stores near me since, but would have bought them full price if I had. Definitely not a ton in a box, but really good portions for a protein-fortified product.

Also I love Kodiak cakes muffins, I like to use strong coffee instead of water for the chocolate ones 😉
Hamilton Beach makes a great pour over electric kettle that's cheap, I love mine! I have the pour-over that sits on top of your mug I love it.
ОтветитьPutting boiling water on coffee with burn it and give it a bitter taste, maybe try heating the water to different temperatures to see which ones is best for you, my husband does 80c for his aeropress
ОтветитьAt the risk of sounding like a total coffee snob, the best way to do a pour over in a chemex is to weigh your water in ratio to how much grounds you use. For chemex (what Rachel is using), I like to do 45 g of coffee grounds, then bloom with 150 ml of water for 1 min, then slowly pour the water for another minute and 30 seconds until you reach 700ml total. This gives much more consistency and flavor, and won't leave you with watery coffee. The gooseneck allows you to have much more control over the pour speed, so you can be precise about the weight and time!

I had no idea about the history of Kodiak. That’s so cool. I have used their mix in a while but I do remember that I had to add more mix to it to thicken it up a bit.
Because of the protein content of Kodiak cakes, you can let the thinner batter rest and it will develop more thickness or viscosity after a few minutes. Just fyi. I usually mix according to box ratios and let the batter rest while I heat up the pan and prep butter. By the time the pan is hot enough, the batter has thickened.

ОтветитьWhy can't you heat up your 'old' gooseneck kettle on the stove instead of pouring the hot water from the regular kettle? And for chemex the water should be between 92 and 96°C ;)

ОтветитьAs a power lifter who is a very picky eater and also work a job that doesn’t always allow much time to stop and eat, I survive on Kodiak cakes pancake mix and their microwave muffin cups.
