ОтветитьHello! I am quite an experienced baker, but I find it really hard to manage layering cakes with buttercream. I am from India and here we get dairy based cream with a fat % of 30%. Whenever I use whipped cream, the cakes always collapse a bit or ooze on the sides. The decoration also doesn’t hold shape ever. Is there anything I can do to avoid this? I cannot use gelatine for this though as most of my clients prefer vegetarian cakes
