I was taught to normally serve a roast chicken whole first, as a separate meal, then use whatever is left in a similar style to this. It takes a lot less time to cook on the hob because the proteins are already quite broken down, so it also saves on energy costs per meal (plus who doesn't love a good roast!).

Last time I made chicken soup I used chicken wings. There were not any complaints. I've also done it with chicken leg quarters.

I was literally watching this and thinking, if he roasted the chicken some before booking it, that broth would have a deeper color to it. I'd at tumeric to it for flavor and color. And wouldn't you know. That's what you did and then to not let the bones go to waste, you roasted and used them in their own stock too!

I usually take the wilted veggies from the broth and blend them up with some cream and splash of the soup broth for some good side soup to freeze.

here's an even more simple chinese-style chicken soup recipe:
lots of ginger, some spring onion, a bit chinese cooking wine (yellow rice wine) and some salt, some mushrooms (ideally oyster mushrooms) and the chicken
just dump everything except mushrooms in the pot and simmer until the chicken is soft as is in the video, like ~30 mins on medium heat. Then put mushrooms in and cook for another ~5 mins and that's it. Clear chicken soup. The only knifework is cutting ginger and dismantling chicken, in extreme situations you don't even need a knife. That's the most foolproof yet super umami and warming chicken soup ever, best for winter nights or someone caught a cold.

*Homemade Chicken Soup*

Ingredients:
- 1 whole chicken (about 4 pounds or 2 kilograms)
- Chicken giblets (gizzard, neck, liver, heart)
- Vegetables (e.g., onion, celery, carrots, parsnips, zucchini, etc.)
- 2-3 garlic cloves
- Fresh herbs (e.g., parsley, celery leaves)
- Spices (turmeric, salt, pepper)
- Optional: lemon juice or vinegar
- Optional: dry noodles

Instructions:
1. **Prepare the Chicken**: Place the whole chicken in a large pot. Include the giblets. Remove any packaging and ensure all juices are in the pot.

2. **Add Vegetables**: If you have old vegetables like a shriveled onion, add them to the pot. Cut off any dirty parts but keep them whole for easy removal.

3. **Add Water**: Fill the pot with water, ideally filtered for better taste. Use cool water to start, for health and clarity of the stock.

4. **Cook the Chicken**: Bring the pot to a boil, then reduce to a simmer. Cover and let it cook for 1-2 hours.

5. **Prep Veggies**: Chop additional vegetables like zucchini, celery, onions, garlic, carrots, and parsnips. Remember to make the chunks slightly larger than desired as they will shrink when cooked.

6. **Remove Chicken**: Once the chicken is cooked and tender, carefully remove it from the pot. Let it cool.

7. **Strain Stock (Optional)**: If desired, strain the stock to remove impurities and particulates. You can also use an egg to trap small bits and then strain.

8. **Add Veggies to Pot**: Add the chopped vegetables to the pot. Season with salt and pepper, and add turmeric for color and flavor.

9. **Shred Chicken**: While the vegetables cook, shred the chicken meat, discarding the bones and skin. Chop the meat to avoid long threads.

10. **Finish Cooking**: Once the vegetables are tender, add the shredded chicken back into the pot. Adjust seasoning as needed.

11. **Serve**: Garnish with fresh herbs and a squeeze of lemon juice or vinegar to taste.

12. **Optional Second Stock**: For an additional frugal tip, brown the chicken bones and skin in the oven, then simmer them in water for a couple of hours to make a second, flavorful stock. Use this for a grain and vegetable stew.

This soup can be stored in the fridge and enjoyed throughout the week, offering a nutritious and delicious meal option.

I saw that crazy tv chef guy flip out on some little girl because she started with cold water. I thought it was gross that he wanted her to cook food in water that had been through a hot water tank. Thank you for making me not feel crazy... 😅

I personally never use hot water for anything besides cleaning! Crap build up in your water heater… oh yeah you’re supposed to clean out your water heater once a year. When was the last time you did that?
