The meringue cuts the sweetness and tartness of the filling.

ОтветитьMy husband's favorite pie and I thought it was too technical for me. My gosh...first off I thought Key Limes were "mandatory." lol This is so simple. Room temp ingredients, timing on assembling and curing time are the big take aways. Thank you...I'm going to surprise him. :)

ОтветитьKey limes are not ripe until they turn yellow. Key limes are picked green to be sent to market, but the perfect Key lime is yellow, not green. Real Key lime pies are yellow in color with yellow zest. Come on man....

ОтветитьI'll definitely try this again with the biscoff cookie crust but... My first time I cheated with store-bought crust...I guess I was so hyper focused on juicing the limes I am like 98% sure that I put 1& 2/3 cup lime juice... It was a bit tart😅 (doesn't help that the measuring cup says 2/3 in 2 spots... Which is obvious but how much more difficult would it be put an extra glyph to indicate as much 😂)
Ate it anyway.
Currently making version 2.0 still cheating on the crust simply because I don't think I have a pie pan.

ОтветитьThe yellow lines are actually the fully ripe limes, that’s why they have more juice. Green limes are not yet ripe.
It’s better to buy lines that have both yellow and green skins.
Hi John! My daughter snd i love your show and have been watching it regularly for 4 years. Your key lime pie is wonderful. Its s really good recipe. Being from Florida though we don't tint our pie green. Key lime pie traditionally is not green or tinted green. It is a pale yellow. But anyway! We love you. You have a beautiful family. We are now living in Boston and would love to come and visit the farm one day.
