I always travel to Central Mexico each winter snowbirding. We're now in rural Mexico and I forgot to pack my May Ploy. So, today I'm going to attempt my own home made curry paste, but I'll need to substitute many of the ingredients. There's of course lots of chiles here, but no lemon grass, no Galanga. HELP!

ОтветитьNice job on this penang curry marion. I love thai curries so much. So much depth and flavor. I would say if there's one thing in all of thai cuisine that i cannot live without, its thai curries.

Also it was insanely spicy and I had to throw out the food. I just deseeded a bunch of the dried chilis and will be resting them in vinegar for a few hours to try again.
Edit: it’s gotten better. I’m on round 4 next. I used dried chilis and had them sit in vinegar to remove spice. Just got galangal. Only ingredient missing now is Keffir lime peels.
Edit 2: ok, fourth time’s a charm. It was great. Now I think I just need to jack up the kaffir lime leaves. No peels in any asian markets in Hamilton.

I have decided to follow your recipe because it looks so good. 😍 ❓Question 1 to the expert: My curry paste looks a lot yellower than yours. I could not find the ratio (I understand it worths being a secret), so I was winging it. Could you advise how to make it redder, closer to yours, please?❓ Question 2: My curry paste tastes a bit bitter when it is raw - just after the blend. I substitute kaffir lime zest with regular lime zest. Does this little bit of bitterness sound right to you? Thank you! 🙏

I was in the Isan region and Chiang Mai region mostly for a few months with a brief stop in the south. What region is this version from, I'm curious and would like to try it. thank you!

ОтветитьA wonderful recipe that we tried last night. It consists of many ingredients that make the whole thing so refined and noble. Luckily there is an Asian shop near here where you can find everything you need. Be careful with the fish paste: less is more :-). The dried chillies took a little longer than ten minutes to soak well. Probably depends on the product. We used normal water for the moisture when grinding and not the chilli water, as we were afraid that it would all be too "HOT" for us beginners. Thanks for the great recipe.

ОтветитьGod I hate chicken thigh. I don't care what people say - grisly, gross. Give me breast any day. Just add a dash of baking soda to the marinade and it's juicy. As for flavour - yeah, I'm pretty sure the chicken flavour is dominated by the curry paste anyway.

What can you replace the keffir lemon (difficult to find in France)? Lime?
I think you know that but the direction for the receipt is for another red thai curry. Not your's but your's Mother:)
