Looks great both of them ! Did you top off the water in the canner so it covered the lids more than an inch? Maybe my eyes are playing tricks on me but they did not look covered and below the water line. Thanks will be making that confit or how ever you spell it ha ha

Just one question, as I have preserved food since the age of 4 😆, but I have never done cherry tomatoes, and now I have way too many in my garden... Why 55 minutes boiling? Isn't that way too long , with conservation of regular tomatoes boiling is 15 min max. Rly curios why such a long time

Please look up raw garlic in oil. High risk for botulism. Cooking the garlic first should eliminate risk but worth a google. Your jars all looked beautiful though.

This isn’t a safe way to can tomatoes unless you are pickling using vinegar, using citric acid or pressure canning, this method is not only unsafe but, you’re cooking the heck out of you tomatoes with a 55 water bath.

Hi, I really like these ways to preserve cherry tomatoes. Since cherry’s to me are thin skinned, do you think this would work with our slightly larger sweetheart tomatoes? They’re more meaty, but about 1 1/2 times the size of the cherry tomatoes. Thanks.

Hi! First time viewer and new subscriber here!! Watching your video made me want to try these recipes. With that being said, I wanted to point out a discrepancy that could affect the food safety of the canned tomatoes. I went to the link for Mama Hoss’s recipe and she added 2 T lemon juice to each quart of the canned tomatoes when she added the hot water. You did not have that in your version and I fear it could affect the safety of the final product long term. I hate to be “that person” and I’m pretty laid back in all regards except for food preservation safety. Please know this comes only with good intent. That’ll you again for your wonderful video and I look forward to watching all of your library. ❤️

I’m just learning about food preservation, but I’m wondering when you’re roasting the tomatoes for the tomato confit, why don’t you put the basil and garlic in while it’s roasting? Maybe it would burn?

I also start from seed. Long day onions. Usually never have a problem. But bad year lost 500 to dampening off in March😢
We start onions and celery in Jan or Feb and harvest Sept-Oct.

Short season zone 3
Last frost June 1 First frost September 5. Have lost beans, squash, pumpkins in first week in August to a frost. 3 years that happened.

Our main garden does not get planted till 3rd week of May to end of first week of June.

Love the ideas for cherry tomatoes.
