I mean, Straizo looked older in Part 2 before Morbing, and he was only 6 years older than Joseph so Part 3 Joseph probably would've looked like 40/50 and looked about the same age as Straizo did pre-Morb in Part 2.

If Joseph prolonged his youth with hamon he’d probably have many more illegitimate children to base parts around.

Honestly, Joseph probably did use Hamon to stay young. Keep in mind Lisa Lisa was 50 in part 2, so Joseph probably looked his prime at that age. Closing in on 70, mans was still an absolute behemoth in Part 3.
While Hamon slows down ageing significantly, it doesn't stop it, hence why Straizo was searching for a way to gain immortality in part 2.

Still strange though that Joseph never considered teaching Jotaro how to use Hamon, though I'd say it's likely because he didn't have time to teach him, as they were constantly moving and battling enemies from the moment they met.
