Ankarsun has no flat batter. The whisk bowl is a ring, you cannot mix other ingredients to the meringe. For sourdough bread perfect. I use the hook.

ОтветитьKitchen aid only for my experience. But the first one lasted for I'd guess 40 years. We sold it for what we paid for it used as we got a free upgrade, another Kitchenaid from a pro cook. I had to replace the gears. I think it cost $15 and hope it also lasts another 40 years. I make bread once a week so perfect for me.

Ответитьi have the electrolux assistant (same constructions as the ankarsrum its from the late 50ies..... still work. still the same tools andni can b ankarsrums newer stuff to it. fantastic machine.

The Ankarsrum mixer is very interesting but too costly for me to even consider. New subscriber here as I can tell already I will certainly love your channel and its content. ОтветитьIMO the expected life on a Kitchenaid stand mixer would be at least 50 years, ours is about 40 years old and has not even needed new "brushes" on the motor.

Sorry to seem demanding , but I thought you were going to rate & compare pros and cons to help decide between the three. I recently bought the bosch just cause the ankushrum was a expensive. I saw a bunch of bread makers using it and it seemed to be a better choice than using my kitchen aid

ОтветитьKitchen aid has put a warning on new Mixers for you to limit the dough hook to LOW SPEED and only for about 2 minutes at a time -or otherwise your warranty is broken. THis is a deal breaker for me in bread bakiing

ОтветитьIt would be helpful if in addition to volume capacities, you could also refer to weight capacities of each machine. Many bakers have adopted baker’s percentages for accuracy and consistency.
ОтветитьMy first Kitchen aid lasted so long well over 25 years and never broke down, gave it to my granddaughter and she is still using it but didn't have that kind of luck with two more I had. my Bosch is doing great after 5 years, I never owned a Ankasrum but don't need another mixer, I also use a Cusinart which makes good bread very fast. its over 20 years old and still going.
Ответитьyou should really compare the Ankarsum to the Kitchen Aid Pro line, not the Artisan. I have a Kitchen Aid 7qt Pro and it works great for pizza a dough kneading swell as the usual easier things like cookies and cakes. and whipping cream and meringue
ОтветитьI have both the Ankarsrum and the Bosch. I have had them both for a very long time. The Ankarsrum is absolutely wonderful for kneading bread dough. I do not like it for mixing heavy thick cookie dough. I prefer the Bosch for that. For this reason, I believe the Bosch is more versatile, iif you can only afford one or only have room for one. I have even used the dough hook in the Bosch for processing ground venison to make sausage. After all these years, my Ankarsrum can only run at one low speed. If I speed it up even slightly, it speeds up out of control. I wonder if it can be repaired? Maybe it's time to purchase a new one.
ОтветитьI have had all three of the mixers in this video and concur with your findings. The Ankarsrum is by far the best one, aptly named "the assistant," because it will knead while you do other things. I love it. So far it has been a foolproof appliance that does what it says it does. I went thought five KA's (one, with a glass bowl, bounced off the counter and three burned out the motor and/or gears.). The KA was a pain for adding ingredients and handling lots of bread dough. The Bosch didn't last long because it is flimsy plastic - it felt and looked like a toy and did not handle large amounts of bread dough. The steel Ankarsrum has been a staple in many other countries and will last a lifetime because of its construction.

ОтветитьIsn't that the less powerful of the Kitchen Aid mixers? The stronger one is the one where the bowl is snapped into place on arms with pegs. Furthermore, the price point for the latter would be more fairly comparable to the Ankasrum.
ОтветитьOur kitchenaid, the most expensive model you can buy, literally fell apart one day while making a cake with it. Yes, I mean LITERALLY fell apart. We had only been using it about 4 years too...and very lightly and occasional only. I took the rest apart and was very surprised to see how crappy the parts were inside. Beautiful on the outside, absolutely JUNK on the inside. Will never buy another kitchenaid mixer again.

I recently acquired one to go with my antique dough bowl for proofing dough. Made out of the same type of metal as the dough pail. I wasn't sure how many of them were still around and it has all the parts. I am so excited to use it. I love kitchen antiques. Thank you for the info as far as the time periods they were used.
Enjoyed your mixer comparison and I am leaning towards the ankarsrum. I have kitchen aids but find with freshly milled flour, the kitchen aid struggles and I have one of the more powerful ones.
I'm using my mom's Bosch. I don't know how old it is, but I'm sure it's more than 15 years.
ОтветитьKitchen Aide mixers were once good mixers until Whirlpool acquired them. We have one of the older kitchen Aide mixers, 30 years and still ticking. Only repair, knock on wood, was a pair of brushes for the motor. It is due to get the grease replaced in the planetary gear assembly.

ОтветитьI owned the Bosch and then bought the Swedish made Ankarsrum and there is no comparison. The Swedish mixer is far superior in every way. The US made mixer is only good for making 3-4 pizza balls and it will walk itself right off the counter. Don’t waste your money. I can make 14#’s of sourdough bread in the Swedish model with power to spare and it can be handed down to your grandkids.

ОтветитьI have both Kitchen and Bosch. I treasure both. I have had my Kitchen Aid for close to35 years and it still works great. The Bosch is about 15 years old and is awesome for making large batches of dough. I have made as many as 10 Loaves. My older model came with two sizes of bowls. One for about 5 loaves, the other for 10. Mixing beaters are different for each bowl.

ОтветитьKitchenaid artisan is garbage for yeast bread. The motor will burn out immediately. If tou dont get the pro 600 7 Q dont even bother for bread. I wish you would of chosen the model made for kneading (pro) to compare. The artisan is only good for cookies and quick breads
ОтветитьWe have a thirty year old kitchen aid with the bowl lift. It been.good but has always struggled with heavier doughs. Good thing I re-fell in love with hand mixing and kneading. I’ve been contemplating increasing my baking production so that I can sell things at the farmers markets in the area not that I’ve retired. The Ankarsrum sounds like the way to go. I’ll keep the KA for whipping cream, egg whites etc. doing those by hand can be too labor intensive. Thanks for the Video.

In regard to capacity between the Bosch and Ankarsrum, you said the Bosch best handles less than it indicates, if I understood correctly. I often make batches of sourdough that are a little over 6kg of dough, so that was a turn off for the Ankarsrum. But if the Bosch in reality can handle less than it's stated 6.3kg (I haven't calculated a "cups of flour" equivalent to that dough size though!), do you have an opinion on which mixer can handle the most dough?
ОтветитьI have a cuisinart stand mixer that I use for bread to save wear and tear on my kitchenaid. The only issue I have with it is the paddle and dough hook aren’t very well engineered and leave a lot of unincorporated ingredients in the bottom of the bowl. The kitchenaid always gets everything and it’s pretty and has a ton of great attachments so I end up using it more now but I’m glad to have the cuisinart because the motor is BULLETPROOF.

ОтветитьIve owned a kitchenaid 350w Pro 5qt stand mixer for 20 years now ... but I generally dont use it for most styles of bread, which are best fabricated BY HAND. I mostly use my stand mixer for the various attachments I use - grain mill, pasta roller, meat grinder, sausage stuffer, etc.
Different styles of bread have different fabrication needs, whereas a stand mixer is only good for mixing and general kneading.
Classic artisinal sourdough for example doesnt like excessive kneading - after mixing, the goal is not so much gluten development (much of which happens automatically as a result of enzymatic autolysis) but rather gluten alignment and layering, which must be done by hand via iterative pull & fold motions. A stand mixer cannot do that - it can only mix.
The only styles of bread I use the stand mixer for is neapolitan pizza dough, which is unstructured (esp if im making a lot and planning to portion and freeze it) and the initial stages of pita dough.
I have the Ankarsrum since 2020 and this machine is so powerful. I bake 6 loaves at a time and the motor doesn't even work hard because the sound it makes doesn't become louder as you add the flour. Quite expensive but I have no regrets. And to me, it's also the best looking of the 3.
ОтветитьI'll parrot what a lot of people have said, I used KA for a few weeks and it struggled badly with the pizza dough I make every week. I knew it was going to die sooner than later if I kept using it. So I bought a Bosch Universal Plus. It's the one from this video but with a stainless steel bowl. I can make the same dough the KA struggled with, and a larger batch without the Bosch even breaking a sweat. I've made the dough almost every week for about 2 years now. It's still as good as new. The KA would have maybe made it a month before the gears stripped or the motor fried. The Plus model's on sale all over right now, it's an awesome mixer. I probably will end up buying an Ankarsrum one day as I know they're great and I want to try one.
But the Bosch is so much better than the KA. Don't let it being plastic and the KA being metal fool you. The KA might feel higher quality, but the Bosch is the real deal.
A better KitchenAid comparison would be the 7-qt. ProLine. It has a stronger, quieter direct current motor and metal gears. In any of these comparisons, I'd like to see the dough hooks in action and a decibel comparison.

My entire Jewish community only uses the Bosch, although some have the Ankarsrum.
No one uses a KA for bread.
They all complain of the same power issue.
The best are made by Hobard.
ОтветитьAn absolutely helpful and delightful presentation! I really found the dough pail interesting. My grandmothers always did their breads and pastries (Eastern European) by hand but I can see how they would have loved the Ankarsrum.
