ОтветитьI made your naan recipe today and it tastes delicious, however, I had to mix by hand and it took forever. At last it came together beautifully but very sticky. I added a teaspoon of vital wheat gluten to make sure the dough would rise. I plan to make it again, the yogurt is a plus!

ОтветитьI think people without gas stoves can get the caramelization too. Just use the top rack of your oven and put the pizza dough on a preheated pizza steel/stone at max heat. Since the flour already has sugar and has active yeast, the bubbles will form nicely and the top will get the classic charred look. Its extremely similar to how pizzas are made.

ОтветитьI've made these twice now and both times i didnt have any yogurt, so i used double cream one time and full fat milk the second time, and just added a little less milk than the full yogurt measurement. They turned out great both times and had the bubbles too, yum 😋

ОтветитьI haven't had traditional naan bread since deployment in 2011. The Kunar province of Afghanistan, real naan bread, the size of a dinner plate and it had a texture and taste that I've never been able to find since. Yours looks the closest and I guess I'll have to try making it.
The stonefire stuff in the store is just pita bread pretending to be naan, the texture is too soft.
There was also a desert version that was drizzled with honey and baking sugar, very nice with the chai tea that I've also found no substitute for.
Salt will not kill the yeast. This has been debunked many times.
ОтветитьOne helpful hint for viewers - keep your stacks of cooked naan under a damp tea towel until serving, then quickly brush on the butter, serve! I always enjoy your recipes, thank you! Also you didn't show when you added the salt.
ОтветитьButter browned too much. Lower the heat. Clarified butter is golden yellow,it doesn't look like maple syrup.

ОтветитьUnfortunately, recipes involving bread and not involving weights/mass are not successful for the majority of viewers. Please get a scale. The naan looks good, but my my ability to replicate the recipe is compromised by your measuring techniques.
