To go from New York to London, for example, fly north to Nova Scotia, then to Iceland and Greenland, then past the point of no return to Ireland and then to London. The “straight” line is not really straight, it is only so on the distorted world map we are all accustomed to. The moment you look at the real straight line between two points on a globe, you understand the “great circle” concept perfectly.

My dad was a commercial pilot. Most commercial airplanes flying over several hours will always get to around 35,000 feet off the ground. So, what circles is he talking about I don't understand. Different planes climb different altitudes. The farther plane has to fly the higher it will get. Usually the most passengers planes fly at around 35,000 feet, especially when crossing the Atlantic Ocean.

The thumbnail illustration is the worst possible example as it pretends to project a great circle path near the equator onto a flat map. The equator, itself, is a great circle. Calculating a great circle path in the tropics is really a waste of time as the parallel circles are close to a great circle.

You forgot to include that, until very recently, the FAA required that planes were always within a safe distance from land 
in case of emergencies. It is only because of recent super reliability of planes that paths can be more direct.
