There are several dishes that are not listed and would be very good to try out; however, this goes in different regions of Germany. A long time ago, Germany didn't really exist. There were several countries in one; Southern Germany and Northern Germany were actually enemies, and their food was very different. There are probably 3,000 different types of dishes in the north of Germany, but not everyone makes them, as some of them have been lost to history. Some could be very strange to even eat; however, some are pretty wholesome recipes.

I tried bringing one of them back, called.... schweinerouladen....pork roulades.. a great recipe from 1870 They're like the beef ones, but pork with fat is rolled up with carrots, onions, and spinach, then boiled slowly for many hours. The recipe is still not done as there are two different forms of this recipe: you can eat them this day with potatoes or you pickle them, and this is where the dish becomes amazing.

and there are different types of recipes from the former East Germany called Dead Grandma. „Tote Oma“. It's pretty much blood pudding fried without the sausage, so it's blood sausage served with potatoes and sauerkraut.

Please note that Austrian cookbooks might be a little bit different than German cookbooks, as Austrians really change up their words for items, like the word tomato, which is not used in Austria, and pineapple, which can be mixed up with the word strawberry.

White sausage: If you have some at home, try baking it. 175°C, about 15 minutes. No preheat. Alternatively, grill it. Make sure to cut little slits into the peel so it doesn't explode.
The traditional Bavarian method of cooking it is to boil it, but I find that frying/baking/grilling yields better results, and the peel is easier to eat, too. Traditionally you're not supposed to eat it, but it's edible, so... screw tradition.

Don't forget the boiled potatoes as a side dish.

I also add caraway seeds to the potatoes. This is good for digestion.

They also taste very good and are much healthier than fries.

Because you just talked about Jägerschnitzel.

Do you know the Jägerschnitzel from GDR times?

This is breaded and fried hunting sausage with noodles and tomato sauce.

That tastes good. You should definitely try this.

Just returned from Germany. Ate German food five straight days before we had to stop. Massive portions, and variety was minimal among all the restaurants we visited. It was all good, but very heavy food. I don’t need German food for a while.

DIE WEISSWursT. Not rue even though thins have changed in the last Sixty Years. Traditional done Weisswurst is JUST done with VEAL since it it a KOSHER RECEPY . Still THE AUTHENTIC MÜNCHNER WEISSWURST WITH PREDICAT is done that way.
Also in the old days of my youth it was a clear rool that Weisswurst had to be FRESH eaten up to LUNCH ! That also changed now days
CABBAGE and BEEF ROLS ROulADEN: dates back to the age of the Crusades when people brought home the idea to wrap in vegitables or meat

You actually got a really really good mix of the best foods in Germany, I love them all and if I'd also recommend all of these. Really happy that you brought in the Mettbrötchen because it's so so good!
One thing that was missing for me as a Swabian would be Maultaschen, basically large ravioli with really good filling served in broth with a piece of sourdough bread. Really popular in the South and definitely worth a try

While I live in the US, we were raised on German cooking, since my first generation American grandmother taught my mother to cook. Nothing shown in your video was unfamiliar, and most summer holidays in our family were celebrated with bratwurst, sauerkraut, and German potato salad. They are still common foods at community-wide celebrations in the Midwest because of strong German influence. Of course, beer is also plentiful.

funny story aside: the Nürnberger Rostbratwurst has it's small size because in medievel times restaurants had to close early, before some guests were served. So they created this small sausage to sell it after the restaurent was closed . . . and they did that through the doors keyholes. 🙂
Dunno if it's true but the story is worth being told

PS: Käsespätzle - Scheiße, sind die lecker ! Kein Fleisch drin, aber ich könnte mich an denen zu Tode futtern
