ОтветитьBillion dollar insight - problem is bottom 2 cm thick part of braised pork belly is tough. Solution: after braised and cook. Wear disposable non powdered heat resistant BPA free human safe gloves. Take the pork belly out, cut off bottom hard 2 cm layer to store in fridge for restaurant owner to DIY eat or give to his favourite employees or middle management. Only serve top belly fat and tender meat to well paying customers.

ОтветитьI don't understand why you have to remove the scum while boiling when you will rinse the pork afterward. Isn't it redundant? Or is there any reason why you have to do this additional step?
