The soup is called 腌笃鲜, a Chinese cuisine very popular in the Yangtze River delta region. The name 腌笃鲜 literally means cured (meat) cooed with fresh (meat and bamboo shoots). Proper main ingredients include cured pork meat, fresh pork leg and fresh young bamboo shoots.
This version kind of combines cured meat with fresh meat. It'd work but not as authentic as it should be.
What happens with the first water that the salted pork and spareribs were boiled in? Is that discarded? It looked like a good bouillon... or was that where the excess salt went?

Ответитьthe kind of food I grew up eating. Chances are because of the ingredients most will not be able to taste it. Basically it tastes like pork boiled with bamboo. If you know how boiled bamboo taste like then you know other than that sorry.
