ОтветитьThis kind of reminded me of Mexican Carnitas. Except we fry the pig in lard instead of boil. Also super delicious. I have never had Jokbal but now I must try it. It looks amazingly good.

In the Philippines it's similar to Pata Tim in terms of the appearance after cooking the difference is the ingredients used 🥰🥰🥰

ОтветитьThis is not a pigs trotter, I only bought 3 fresh raw pigs trotters today. A total weight of 1.5 kilos for 3. I was already cooking them when I came across this video. Pigs totters are at best 95% fat and tendon. Yes! You have the pigs trotter attached to higher leg portion. But to headline at promote it as a pigs trotter is completely wrong.

I made this recipe, too there are a few things I need to share to help anyone wanting to make this recipe.
Spices: If you don’t want overwhelming spice flavour cut down the spices to a qtr what this recipe calls for. I didn’t use a spice bag so perhaps that’s why my spice flavours came out stronger.
Strong taste from meat: I also found no amount of rinsing the soaked hock pork meat took that gamey smell and taste away. But it did significantly reduce it. What I did was soak the hock in water salt and vinegar for a while and did this a few times. I recommend soaking hock overnight in vinegar, salt water and and next day freeze it for at least a week. Freezing it will take off some of its strong flavour. I also boiled my hocks twice in salt for 20 mins each and rinsed hocks and scrubbed pot again.
Coca Cola: I added Coca Cola to help tenderise meat, add deeper flavour and deepen Color.
Apple and coffee: I added only half the coffee amount from this recipe and in hindsight I should of added more because that’s why the spice flavour was quite strong. The apples were wonderful but next time I will double the amount because I loved the flavour and sweetness it gave the pork meat.
All up a good recipe, at my local Korean grocer here in Sydney, Australia I used to buy 1 already prepared and cooked small sized hock vacuum sealed - it came with all condiments, a dipping sauce, chilli, raw garlic all for $12-15AUD but to buy the hocks per kg is $7.99AUD - I got about x2 large hocks price of cooked one. However the cooked one doesn’t have any gamey overly porky taste.
Lastly I’m not sure if I’ll make again in a while - since I felt I failed but not Maangchi fault it was my own fault since I didn’t follow her recipe to a T. Use the muslin bags guys!

Pigs feet we have it marinated in lemon juicr, cucumber, i dont love it but is a popular dish.
Pigs tail in various preparations, with rice, or stewed with beans.
