The idea of the coinflip in soma is that at the moment the copied consciousness happens you and the copy have the exact same conciousness at the moment of transfer. When you open your eyes there is a 50/50 shot you would be in the new body. But really the you in the original body was always there and never left the you that leaves is a copy leaving behind the original.

To be fair, the majority of the cells within our bodies are replaced by new healthy cells on a periodic basis. Some of these do so every few days, whereas others take upwards of 10 years.
