ОтветитьRespectfully, Chef, here in Italy, basil leaves are torn from the center stem so as not to crush them causing the aromatic oil not to go on your fingers, but into the sauce. More importantly, basil leaves that are torn quickly release their aromatics and flavor and then become bitter with continued heating. Most chefs here tend to tear their basil leaves in about five minutes before the cooking is finished which is enough time for them to work their magic. I respectfully suggest you give this method a try with your beautiful home grown basil leaves. Buon appetitio!

Ответитьi use peeled plum tomatoes or when in season San Marzano or Datterini which i blend into a thick sauce in a food processor and then i add the a few leaves of basil and roasted garlic, and tablespoon of sugar, and let it simmer for 7-10 minutes
The traditional sauce it’s made of sieved tomatoes so it should not have skins at all.
so this sauce dosn’t appeal to me
For those of you who dislike tomatoes try Gwyneth Paltrow's easy tomato-less tomato sauce recipe from her cookbook "Clean Plate", it's absolutely divine and easy to make and doesn't require any tomatoes!
