I use room temperature water and a mason jar with a lid to shake my matcha with some honey in the water. I am able to get a very nice crema and it does have a very smooth and milky flavor. I noticed using a larger jar than necessary does produce better crema.

80 degrees C is NOT warm. It will still burn your tongue or lips. Be careful matcha heads!

The instructions on my high quality Matcha Kei Master's Tribute is: 2 large amounts of bamboo spoons (like 1 big tea spoon), 80ml (2,7 oz) of 70°C (158°F) degrees of hot smooth or filtred water and whisk it for 10-15 sec. in a fast and creamy W or M formed whisk speed to get much froth and a medium thickness. That's Usucha. For Koicha 4 large bamboo spoons and only 40ml (half amount of water), low whisk speed the whisk motion is a circle around the cup (5-10 sec.) and then upwards-downwards (5sec.) and leftwards-rightwards (5sec.) in order to make sure the powder is gone and the liquid is very thick without froth. As you've said, there are many ways. Cheers!

Definitely don’t need to sift. I’ve never used a sift. My Matcha always comes out so good

I like my matcha warm to hot with a pinch of salt, a pinch of extra hot cayenne pepper (from a capsule), and coconut cream (a couple of centimeters in the bottom of the cup before frothing). I froth it with half the amount of water and then add the rest of the water afterwards. Usually can't stop at one.
Oh, btw, I always SIFT the matcha powder into the glass, using a fine s/steel sifter, before adding the water. I think it's nicer than unsifted, but maybe that's just me.

cold shaking can create just as much froth. you just have to do it without icecubes, add them only at the end.

Koicha is so strong that I d call it Eat rather than drink, and the tea is punching you, literally. But somehow my most favorite for the morning tea 😂

matcha shot - 1.5-2 tsp matcha with 40ml of 70 degree/cold water. Stir gently until no clumps, avoid bubbles
matcha - 1/2-1 tsp matcha with 25-30ml of 70 degree/cold water. Wisk until no clumps and frothy. Add water to taste

When you say 70 degree, do you mean 70 degree Celsius? Just making sure because world wide everyone use Celsius, while here in the US we tend to mostly use Fahrenheit.

I met information that matcha should not have a contact with metal because it decreases some enzyme level, so it is even recomend to use this special wood spoon instead of metal one. Also matcha is grinded using stones not metal grinder.
