America’s Test Kitchen recommends covering the crust completely while par-baking so it doesn’t over-brown when you bake with the filling in it. They also put part shortening part butter in their crust, kinda interesting.

microwave the juice that comes out of the apples while you work will turn it to caramel. pour the apples in your pie and then the caramel and it will be less wet. :) delicious.

this video is rad, i am using it to bake a blueberry pie as i type this lol, my only thing is that i don’t have a food processor or a pie-stone 😅 my only wish is that alternatives were at least mentioned for both of these. i suppose i could have just googled it tho lol

I was thinking of commenting that I always appreciated the aesthetic of pies that have strips of crust in a grid pattern over the top rather than a solid piece covering them, but he ended up showing one of those too.

Of course, aesthetics aren't the really important thing when it comes to pies.

For 2 cup flour, i would say start off with 2 tbsp, and add a teaspoon at a time until its hydrated and forms a clump when pressed in your palm. But before you add water.. make sure the butter is worked well into the flour. Run the flour and butter mixture thru your finger tips smearing it until it resembles coarse yellow corn meal, and the flour will have a light yellow appearance when its ready for water. Also, it may be easier to cut the double pie crust recipe into two balls before you chill it.. bring it into one lump weigh it up and divide roughly 55/45 or 60/40%

WWWWAAAAYYYY too much work to prevent a soggy bottom. Also, you don't get to do all the fun crimping art! Just put some rolled oats in the bottom before the apples to prevent the soggy bottom.

The way that blueberry pie held its shape is a thing of beauty. Is that due to the corn starch? Any other tricks for that? I've seen so many berry pies fall apart and not hold shape properly.
