There are a ton of people with Jewish blood who are not religious. You can’t erase their heritage because of their lifestyle. Also Jewish genealogies in the Bible were determined by who your father was, not your mother. So I’ll go with the Word of God above what the rabbis say on the matter.

You can convert to a religion you can't convert ethnic groups if I'm African descent,, I can never change that because that's my ethnicity, religion and ethnicity are two different things. For me Judaism is a culture and tradition and while that makes me different, I am white because I’m Ashkenazi Jewish, it wouldn’t be fair for me to claim otherwise.

My great grandfather was religiously Jewish, born in the Russian Empire, but ethnically German/British.

It’s very simple. Ashkenazim Jews are of European ancestry with small middle eastern origins. That’s because only men came to Europe and married European women. Some Jews like Ben struggle to admit that today, but clearly explains why they are successful and light.
