ОтветитьI must take care of the Fresh urad dal, and soaking which I do for 8 hours but every body talk of idli rice (parboiled/half boiled rice) I make with either raw rice or a 50% mix of raw and boiled rice. Idlis come out ok wouldn't say real soft.
What rice do you recommend?
Steaming time I give is 8-10 minutes but with your method of grinding and timings it only requires 3-4 minutes.
I use mixi for grinding which does heat up the batter.
I must buy a tabletop wet grinder.

Ответитьthis is restaurant idli ratio. 1:4 traditional idli made at home was made with 3:1 ratio. But for restaurants Urad is very costly so they started reducing. Even today my friend in Tamil nadu in their house they make 1:1 ratio equal parts of Urad and rice makes soft idlis and it won't spike your insulin. This is the healthiest idli. People think rice is the main ingredient in Idli and dosa but actually it is Urad dal because it ia high protien breakfast. Rice is added for carbs and to help in fermentation is rice has more carbs that bacteria eat.
Most breakfast of India are actually High protien like Idada in north and Gujarati Khaman Dhokla are combination of Besan and Urad no rice making it high protien. But as cost of lentils went up people starting using more and more rice.
Please share Dhokla recipe without soda or Eno for rising.
