ОтветитьSo cream cheese is basically just blended queso fresco. I thought the difference was that you blend it with butter.
ОтветитьIf ya mess up like I did and put the lemon juice in with the milk before its boiling, don't worry just let it cool down, and re heat and add more lemon and the curds will finally show !!!

Can we store cream cheese in the freezer for long instead of fridge ?
Thank you for this video, I just made cream cheese and the recipe said nothing about putting it in the food processor after straining. I was worried when it came out lumpy. I will process it in the food processor and see if it gets creamy.

ОтветитьCream cheese is uncommon here in South America, Ecuador. Once in a while I can find it in stores but they are priced for gringos and are VERY expensive. Now I can make my own. I've tried your recipe and it turned out perfect. When I put it into the food processor I added salt, some fresh dill and couple of tbsp of heavy cream. Whipped it up and oh-my-gosh, it is perfection. Thank you so much for your video, I will share it with all my friends here. Sending you hugs across the miles!

I took one teaspoon of active culture sour cream, and added it to an oz glass of half and half, let it sit overnight at 86F, the next day, I had very thick sour cream. Then I drained it in tight weave cheese cloth, it turned into cream cheese, , , So that worked for me, so why use acid to curdle the milk? and would it help if the milk was scalded first ?

ОтветитьYou can do this with low fat milk, but need to use more than full fat to yield the same curdles. I realized also that you need to do the food processor part or it comes out weird too.

1. Does it need to be heated and why? Because I know milk curdles with lemon normally anyways.
2. Can this be used to make any other kinds of cheese? An aged cheese? Something that will last longer?
3. Can you freeze it?

I am allergic to cow's milk protein, casein. With cooking this recipe, does that remove the casein?
