Classical Rome was never LATIN speaking manly it was 2 speaking Latin/Greek it was only latin manly on West conquered territories because Original Romans wanted to Keep Greek for themselfs... Rome was founded back in 800 B.C as Greek/Hellenic state participating in Panhellenic events like Isthmian games. Latin was used officially in Rome after the absorption of the Aeolic descendants of Aeneas the "Latins" back in 250 B.C . Greek schools were overwhelm dominating latin schools in ancient Rome who were about to close after 200 years of its existence.

Even if it is a stretch, as the Ottoman Empire claimed to be Rome for conjuring the Eastern Roman Empire, and Turkey is widely considered the sucessor state of the Ottomans, I like to think Rome still is a continuous state that has just changed beyond recognition.

For the West (although thus varies), they DID recognize the Byzantine Empire as the Roman Empire until the reign of Charlemagne. The Pope feeling annoyed by how the Byzantines abandoned Rome to barbarians, how the Byzantine Church was not under his control, and turning to the Franks since they were more reliable protectors, crowned Charlemagne “Emperor of the Romans”. After this, with a “Roman Emperor” in the area of Germany, the Byzantines were merely considered Empire of the Greeks.

Wait, so they never called themselves Byzantines??? They considered themselves Romans from Rome even tho they lived in Constantinople and were Christians?

When it was busy rising and falling it was the Roman Empire. I will never understand the desire of European academics to rename everything. There was literally no such thing as the Byzantine Empire.
