this cheesecake slice is so moreish and really easy to make. recipe written below. lasts a week in the fridge.
leave the cream cheese out to soften before you do anything
pre heat oven 180 degrees C
18 x 28 cm lamington tin with baking paper
base
1 cup plain flour
1/2 cup firm packed brown sugar
1/2 cup dessicated coconut mix through then add
125g butter melted
put in base push down back of spoon then smooth over
bake 15 mins
filling
250g filly cream cheese
1/2 cup sour cream
1/3 cup caster sugar
1 tea spoon vanilla extract beat on low til smooth then add
2 eggs beat again on low til smooth
pour onto base
3/4 cup lemon spread
dollop on top then swirl
bake 25 mins
leave out to completely cool down
fridge 1 hour without glad wrap
then cover keep in fridge another 3 hours
slice how you want
store in fridge covered will last a week
