wow no idea why I expected this to be.. carbonara, but you know.. a bit better and with bacon replaced by something like mushrooms. This is something on a whole new level. Really amazing to see this from POV of the chef, with detailed reasoning.

Will try this at some point in my life when I have a chill day on my hands.

Shouldn't a carbonara contain pasta? I mean, this probably tastes good as an amuse gueule but when you read "vegetarian carbonara" you expect a full dish of pasta.
