- Research what a balanced meal looks like (though individual needs vary, I included approximate portion sizes for starch, protein, and veggies)
- Make a grocery list (feel free to add on any snacks or additional food you might want)
Day 4: Chipotle bowl
- Saute 1/2 diced onion.
- Once translucent, add bell peppers, 1/2 can drained and rinsed black beans, 1/2 15 oz can fire roasted diced tomatoes, 1 c low sodium chicken broth, corn, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp paprika, 1/2 tsp chili powder, 1/2 tsp cumin.
- Cook for 5 min
- Top with shredded Monterey Jack cheese and let melt.
- Optional: Top with shredded lettuce, sliced avocado, lemon juice, and cilantro
- Enjoy with tortilla chips or with a fork!
Weekly grocery list (for 10 meals or 2 meals for 5 days)
Boneless, skinless chicken breast (2 lbs)
Atlantic salmon (12 oz)
Soft tofu (14 oz block)
Penne pasta (6 oz)
Baby potatoes (1.5 lb bag)
Orzo (6 oz)
Rice (2/3 cup)
Low sodium chicken broth (4 cups)
Spinach (1 bag)
Asparagus (1 bunch)
Persian cucumbers (1 lb bag)
Cherry tomatoes (12 oz)
Bell pepper
Onion
Green onions
Pesto (2 tbsp)
Heavy cream
Black beans (1 can)
Fire roasted diced tomatoes (15 oz can)
Can of corn (15 oz can)
Monterey Jack cheese, shredded
Feta, crumbled
Corn tortilla chips (1 small bag)
Fresh oregano
Lemon (2)
Pantry staples you might already have:
Salt, pepper
Olive Oil
Garlic powder
Onion powder
Italian seasoning
Red pepper flakes
Paprika
Chili powder
Cumin
Garlic
Honey
Sesame oil
Chili garlic sauce
Rice vinegar
Sesame seeds

ОтветитьI noticed you used an oven mitt for the lid of your pan, see if you can fit a wine cork under the lid handle and just pinch that instead cause it wont get hot. That's what I use for my stainless steel lids :)

ОтветитьOmg I do this too! Except w rice because that Hawaii upbringing is strong. I also just use refried beans straight from the can and stick it in the microwave with leftover rice and cheese. Then top with whatever’s around !
