My favorite noodle dish is Mikawa-style miso nikomi udon. Made with the red miso of Mikawa, it has a very rich flavor, but it’s perfect for a cold winter’s day

The art of preparing wheat flour may have come to China via the Silk Road. At any rate, the preparation of wheat dough in a soup was referred to as a 湯餅, and indeed it was not always shaped like a string and could look like ravioli shells at times. 😅

My favourite noodle dish - aside from stir fry with ginger, garlic, chili and NOT soy sauce - is Italian pasta bianca. It really is the simplest dish, but you need good quality pasta to make it work. Cook lasagne, cut into squares, or papardelle until al dente. (Salt optional.) Dress with olive oil and freshly grated parmesan. That's it. I like to add a little black pepper and garlic, which is not traditional, but then; this is usually a dish served to the sick.

you can put the bonito flakes/katsuobushi into a reuseable or cotton tea bag so you don't have to strain them out after, and make a mess of your strainer. I do it all the time, works well!

A fun episode Max! Much Japanese homecooking uses dashi as a base. Often the instant stuff though! Using katabushi is nicer and a bit luxurious. Simmer chunks of peeled daikon radish in a dashi broth for a warm flavorful cool weather dish.

Fun fact about fugu (puffer fish), they are only toxic if they are wild caught as the toxins they produce comes from specific bacteria in their organs. If kept in a bacteria free tank, the puffer fish will not be toxic at all which is where most fugu served today comes from.

MAX - I once tried FRESH made Somen in an Expensive Japanese restaurant, they made the noodles in the back of the Restaurant , the Flavor , Texture and taste is way different from the store bought Dried variety, even Gourmet Somen.
also the Restaurant made homemade fresh Dashi & soup stock.
it was Expensive like $40, compare to the Bamboo flue Somen ($20) all you can grab.

MAX - actually since Antiquity JAPAN has had all kinds of RICE noodles , in Varying thickness from Dragon mein, Vermicelli thin, to Medium noodles like RAMEN , to thick Broad noodles - chow fun.
also, Japan had various Starch noodles, like Bean thread, Cellophane noodles , and YAM noodles.
the oldest noodles in Japan came from CHINESE monks , and made Shirataki noodles , made from TOFU.
all these NON Wheat noodles were used Interchangeably in Soups , Nabe, Sukiyaki, Mein dishes , as well as Pan fried noodles.
it wasn't until the MEIJI era did Japan really began to replace all kinds of Wheat based noodles & Western pasta.
where the Japanese began to copy Foreign pasta , creating Yoshoku food.
