Seeing as they have no quarrel with xenos and are happy to just leave a world for a truce, while the Tau are willing to ask for peace during every point of a battle leads me to believe that if the Tau encountered grey knights (for whatever reason) the grey knights would be more than happy to accept a truce and fight with them. The grey knights would probably enjoy being around Tau since their ridiculously low presence in the warp means they're basically overlooked by every chaos God. Overall, the Tau would probably experience their least brutal battle if they encountered grey knights.

I think Grey Knights would treat Tau same as ordinary humans and just kill them. First they don't care about them and second to prevent rumours to spread among allied humans

I love the lore of the Grey Knights basically controlling all of Saturn. They're so hard core they get their own moon/planet IN THE FUCKING SOL SYSTEM!
