ОтветитьI love soup in general. Difficult to say which is favourite because I love so many. One of my winter staples is soup made of tomatoes, savoy cabbage, carrots, potatoes and red lentils seasoned with cumin. Yum. Currently experimenting with miso soup, got two kinds of miso and making different versions. :-)

ОтветитьI am spreading the word about you guys; I have a few friends who are natural foodies like me and also vegan. I love the way you created the taxonomy of soup; it was great. I was taught to begin everything with a mirepoix unless making a gumbo where you substitute green bell pepper for the carrot; I think it's super important to begin with a pre-heated pan especially if you're not cooking with oil. I really like blended soups; but then there are those minestrone/gumbo chunky versions as well. I found this epic vegan Indian cookbook and just got addicted to garam masala flavoured carrot/red lentil soup and have been experimenting with it every since. My favorite mistake (favorite guy I lived with) took an hour to cook anything --- I include scrambled eggs -- I will always love him and he is my best friend but cooking does not have to take an inordinate amount of time as you guys make so manifestly clear. He was Irish too so laugh and have great memories. Keep up the good work!!!!!
Cheers! The only thing I am not crazy about is coconut milk; I soak almonds or walnuts or use tahini and it works for me. Tx you guys!!!

ОтветитьThese guys missed the one big way to get the best flavor. Create a sofrito. Use it as your base and then you can brown the veggies at the end. A sofrito is useful in any cuisine you choose. I always deglaze the pan.

ОтветитьIt's a limited formula. You missed a few details. Sweating garlic and onion is not a base, it's an occasional (sometimes overused) first step. The base is the texture and flavor of a liquid starter that gets you started on choosing the flavors that will all come together. That's when soup becomes an art. Base chooses temperature, chooses taste (sweet, sour, savory) chooses protein, chooses fats, chooses veges, chooses acid (including added flavors), chooses spices. In that order. By taste, an experienced cook recognizes what the base has decided to blend with. The experience is being a thoughtful eater. It's time for me to go get a serving of my latest soup. A tomato based beef stew. I have even made a soup with a peanut butter cream base. Don't limit yourself so much.

ОтветитьSecret. A good soup needs a lot of time. No it’s not a pun. Good soup is cooked for days. Even put in the fridge and recooked. Switching between heat and cold helps break down the cells and the flavors blend even more.

ОтветитьPlease do a video on seasoning. Common ones, uncommon ones. Add ratios. I found that piece of your video was lacking. Garlic powder, onion powder, cumin, paprika, oregano. Stuff you can't really go wrong with. Also how much to use.. toss a tbsp of each in general.
