I'm curious about canning celery. We enjoy cooking with it, but can't use it quickly enough fresh. My husband has no teeth, so he can't eat it raw, and I can't eat a whole stalk by myself. I tried freezing it, but it doesn't seem like it retains the nutritional value very well. It was pretty pale looking. So, I'm anxious to see you can it. Thanks.

I have Amish as neighbors, their homes are much different than yours. They don't have rugs, over stuffed furniture or knick knacks etc. everything is spare and serves a purpose. Perhaps the Mennonites do things differently, but the old order Amish near me keep things very simple.
