INGREDIENTS: (2 servings)
100g or 1/4 lb noodles (any kind works)
2 chicken breasts
1 tsp light soy sauce
1/2 tsp garlic
1 tsp cornstarch/cornflour
2-3 tbsp cooking oil

Vegetables:
1/2 red bell pepper/capsicum
1/2 green bell pepper/capsicum
1 small carrot
1 small broccoli
2 green onions

Stir Fry Sauce:
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tsp sugar
1/4 tsp black pepper
1 tsp garlic paste
1/2 tsp ginger paste (optional)
1/4 cup water
1 tbsp cornstarch/cornflour
(Taste and adjust salt if needed)

SUBSTITUES:
No dark soy sauce?
Replace with 1 tbsp light or regular soy sauce + 1 tsp sugar. The noodles will have a lighter colour than in the video.

No light soy sauce?
Replace with regular soy sauce

No cornstarch/cornflour?
Replace with 2x all purpose flour

What other vegetables can be used?
Cabbage, snap peas, snow peas, bok choy, mushrooms, bean sprouts.

TIPS:
• Spaghetti noodles work great for beginners as it does not break or turn mushy easily
• Ensure the noodles is only 70% cooked. It should be soft on the outside but hard on the inside. It will continue cooking while stir frying
• Ensure the noodles have cooled properly before stir frying or they’ll turn mushy
• The glaze is caused by the cornstarch in the sauce so I highly recommend not skipping it
• Don’t cook the chicken for too long in the beginning. Add the veggies once it gets a sear so that it’s not overcooked at the end
• The stir frying needs to be done in high heat so the vegetables don’t steam and turn soggy

This is an excellent, no fail chicken chowmein. Your simple recipe from store cupboard ingredients is perfect - easily attainable for a no-notice supper, and works beautifully. Bravo!

Never wash your noodles or any pasta. either cook them more al dente and let them stand just until you're done with everything, or take them out on a tray and spread them out.

I didn’t have broccoli and red pepper. So instead of them I added onion and chili pepper. It was really good. I recommend adding onion it’s making the dish very tasty. And if you love spicy foods you should try to add chili pepper. Thanks for the recipe. It was really delicious. ❤️

Well I wanted to post some pictures of it but seems like I can't. Oh my gosh this came out fantastic and I tossed my noodles with sesame oil and garlic in a different pan because I'm serving six people it was too much for one pan. Amazing thank you so much

I used kikoman soya sauce for dark soya sauce . My noodles did not look dark like yours nor did I get any glaze. I wonder where I went wrong? 😞

Soy sauce is okay for me... Most recipes ini watched they used oyster sauce and some others.. Its not okay for me.. Just bcs I cant take MSG in those product... Why we use MSG.. Great chef is great ability to compose the natural orchestra... To the beautifull taste.. Just what she did.. Beautifull presentation, beautifull angke, beautifull hands.. Show beautifull intelligence.. Those come not from tiktok etc. But from her/with her team intelligence 👏👏👏👏🙌🙌🙌🙌🙌
