ОтветитьFirst tip is bullshit. If your objective is to build a quality crust on a thin or medium steak do not let it get to room temperature. Simply take it cold from the fridge. Pat dry any surface moisture, season liberally with salt and then put it into an extremely hot cast iron pan that you heavily oiled twenty seconds prior. The oil should touch the edges of the pan when you drop the steak in. After laying the steak in for a few seconds, lift it and move it to another postion in the pan. It will stick a bit the first time, if it does it the second time your pan wasn't hot enough to start with.
Once you have a crust 90% of what you are looking for take the steak out and pat dry the uncooked surface and add a little more oil to the pan before putting the steak back in to finish the second side. If you are brave enough press the steak down with another pan or a spatula to allow for even searing.
As for doneness its all down to lowering the heat to the pan and adding some butter for flavour to prolong the rise of the internal temp. For thicker steaks just chuck them into a low oven until the internal temp rises. My favourite oils to use are beef tallow, rice bran and cotton seed.
