ОтветитьWorcestershire sauce cannot replace both Fish and Tamarind sauce.
The sauce has a the fish element but it does not have the amount of tamarind element needed.
Also you don't boil Pad Thai rice noodles in water. You soak them in cold war for 30 minutes or until they soft and then you pan fry.

ОтветитьThis recipe is very close to the way I make it, however I always use toasted peanuts. I find that raw peanuts give a doughy taste and feeling, whereas a quick toasting releases the whole potential of the peanut: More caramelized flavours and more crunch (optimizing the HETEROGENEITY).
ОтветитьNot a fan of Asian food but I really enjoy your videos. I doubt I would even try this because of the chicken. The last view I had of some of the pieces were raw in places. I don't like questionable chicken.

Stir-fry... I tend to adapt ingredients a lot... The Pad Thai I get as a kit... sauce in a bag... veggies in the bag as a kit, sometimes noodles, sometimes not ... I vary the meats... sometimes I use different noodles or rice (Basmati) ... I don't have gas but I do have induction and wood-fired woks... The Pad Thai kit is about enough for one or two and the veggies are pre-cut and sometime a bit limited in plant family variety... I like doing it outside over my Ranger firepit by Solo Stove with the cooking adapter... for just me it is super simple ... if I were going to serve a number of people as a family get together... per-cut pick your veggies and meats. Noodles and Rice precooked and ready to ad after meat and veggies are cooked sauce added the the rice and or noodles stirred into the meat veggies and sauce... warm enough to serve... my wood-fire woks cook very fast... the ingredients listed on here do give me some ideas on how to get more variety to a Pad Thai themed meal ... I am pretty sure the grocery store kits don't give anywhere near the diversity of do it yourself combinations. Worcestershire and catsup would add to sauces I might explore because I do guidelines not recipes, and what you give are suggestions.

ОтветитьTried this recipe out and it was so good! I replaced the tamarind with lime and the sauce still tasted amazing, I'm not that skilled in the kitchen but this was pretty easy to follow
ОтветитьYou’re definitely onto something there, when I used to eat at the little Thai place where I lived for many years their slogan was ‘mama’s cooking…’ and she was, and she did one portion per wok sometimes two ….once it becomes overcrowded in wok you cannot get good consistent noodles.

ОтветитьAmazing recipe. Absolutely delicious. I did have to precook the noodles a little longer than suggested. At half the package directions they were barely able to bend out of water, and I didn't have faith that a couple minutes of stir frying would take care of it. I would rather err on the side of mush than a noodle I can't chew through, and overcooking the chicken while I'm trying to get the noodles right didn't seem like a better alternative.
