Ingredients for 4 slices:
2 Eggs + 1 egg yolk*
1/4 cup heavy cream or half and half
1 tsp vanilla
1/2 tsp cinnamon
Splash of maple syrup, plus more for serving
4 slices brioche
butter
powdered sugar
*To adjust the recipe use 1 whole egg for every 2 slices of bread. Add 1 egg yolk for up to 4 slices. for 6 to 8 slices use an additional 2 egg yolks, for 10-12 use 3 egg yolks and so on... 8 slices of French toast would call for 4 whole eggs and 2 egg yolks.
Directions:
In a bowl combine eggs, cream, vanilla, cinnamon and maple syrup (use just a bit for a hint of sweetness). Mix well.
Heat a pan over medium low to medium heat and melt in a tablespoon or two of butter. While your pan heats soak both sides of your bread in the egg mixture adding them one by one into the hot pan. Cook over the heat for several minutes per side, this will take some time. Do not heat your pan too high! This will allow the center to cook and set without burning the outside.
Remove from the heat when they are golden brown and cooked through. Dust with powdered sugar and serve with maple syrup.
