Have you used a heavy-duty grinder? Which type or brand would you recommend? Wish we could get bulk fresh organic corn kernels but not enough farmers are growing it. The market demand side is growing rapidly, though, for non-GMO.

Hey Matt, you can make that great cornbread even better with a tsp (or more) of cinnamon. But then, I am very partial to cinnamon.

Great info! One spin I do when making cornbread, which I love making in a cast iron skillet or pan, I preheat the skillet in the oven, about 20 minutes so it's thoroughly hot, then a couple minutes before I'm ready to bake my cornbread I put about 1-2 tbs of butter in the pan, pop it back in the oven until the butter is melted and hot (don't burn the butter though!) Then I pour the cornbread batter into hot skillet with the hot butter & bake like usual. You get a crispy kinda crust that is so delicious& a fabulous texture! (Now I'm craving some cornbread!) 😆
Ice also baked my cornbread on the smoker- SO delicious!!

OK. Now I feel kinda dumb. I never thought about using pop corn to grind cornmeal. My daughter was recently told she needed to be soy and gluten free for some health issues. Being the main cook in the family, I'm looking at inexpensive alternates to the way overpriced health food stores in the area. I will be trying this today. In South Africa we call it Maize meal... Its used in snacks at the shop, in porridges and pap with is a side to food.
