Emma Campbell 8458 from two years ago. I couldn't agree more, though as much as I love papa, a.k.a. Joshua Weissman, yeah I do feel like his Caesar salad was a little bit under-prepared. I've heard a lot of people say that you should never cut lettuce with a knife, which I can either/neither disagree or agree, cause I just don't know. However, small bite-size pieces would always be preferable in my book. That said, Mr. Weissman I love you like any straight man can, you're my papa.

ОтветитьEverything you do here is great until you destroy this recipe with the worst oil to use in any dressing. Vegetable oil!!???.😂 A travesty !! Extra virgin Olive oil is the oil to use . Never use vegetable oil. This is not a classic Caesar dressing brother.

Ответитьthe lemon fucked me here. i was listening to the vid rather than watching and my large lemon resulted in 3x the liquid he got. it was really hard to get it to thicken. next time ill be trying gordons method (make the mayo first)
ОтветитьTo be honest, this is not a completely original recipe, as it did not have any anchovies, but nice try, lettuce leaves go complete and it should be Roman lettuce

For anyone attempting this 3 years later... Don't make my mistake! It's definitely possible to overwhisk the dressing. I've had mixed success with making mayo by hand in the past so I beat the ever living shit out of my dressing and... You guessed it... Ended up with Caesar mayo. Was still delicious and didn't seem to make much of a difference once it was on the lettuce leaves, but be aware of that!

ОтветитьThe original recipe called for Worcestershire sauce, no anchovies. Worcestershire sauce has anchovies in it, but it doesn't taste like fish. Sorry, but a fishy tasting salad makes me hurl.

That dressing is also clearly FAR TOO salty for the average palate.
AND... the most credible sources I've encountered call for EVOO! Not only is this much healthier (without the poison of seed oils), but SO much tastier!!!
I served as a French Service waiter in some very fine restaurants. 'French Service' is all about the waiter/captain preparing table-side items. I learned to make the classic, 12 ingredient Ceasar, which was well liked. 1) anchovy, 2) garlic, 3) crouton (with two forks grind a few croutons, anchovy and garlic into a fine paste) 4) coddled egg yolk 5) olive oil (whip up a mayonnaise) add 6) juice of a hard lemon 7) red wine vinegar 8) worsteshire sauce 9) tabasco sce 10) dijon mustard 11) parmigiano Reggiano cheese 12) romaine. Add the rest of the croutons, toss and serve.
