Hi Somjit,

My second question is about the yee mee. I have cooked many different types of noodles, egg noodles, wonton noodles, glass noodles, ho fun noodles, beehoon etc., but I never cooked yee mee. I don't know these kind of noodles (but they do sell them where I live!). Since you have several recipes with yee mee, you must like yee mee very much. Can you explain what makes these yee mee noodles so special for you? Is it the flavour, is it that they are easy to cook with, is it the texture of the noodles?

Hi Somjit,

Thank you for your recipe. I have two questions, which I will split into two separate comments. I read that you are a Thai living in Malaysia. So, I think you are the appropriate person to answer my first question. In your recipe you use "thick soy sauce". Although the link is not working anymore, I'm pretty sure that the soy sauce you are referring to is the typical Malaysian thick soy sauce, also known as karamel masakan, dark caramel or cooking caramel. Where I live, they don't sell this typical Malaysian sauce. However, they do sell Thai black soy sauce, which is also very thick, not salty, a bit sweet but not overly sweet (not like kicap manis) and full of molasses. So, my first question is: as a Malaysian Thai (or a Thai Malaysian), do you think that Thai black soy sauce is a good substitute for the Malaysian thick soy sauce, or does it differ too much to be a good substitute and should I try to source the 'real deal'?
