ОтветитьG’day mate, I am using your “no oven” stove top corn bread recipe to make creamed corn cornbread as one of my Christmas Day items. I had made stove top cornbread long ago but had forgotten how I did it. Your recipe is a refresher esp re proportions of cornmeal, flour, baking soda. Yes sir, some of us in Australia ❤️❤️❤️ cornbread. Nice ending with quotation from Psalms. 😁😁

ОтветитьI made it according to your instructions, it was a little on the dry side, I’m wondering if I could add maybe a cup of cream corn to it. Will that work?
Also I’m up over 6300 feet of elevation, does that effect it?

ОтветитьI modified your recipe, I don't use the white wheat flour, I add avocado oil to the pan as it warms up, I mix 1 cup of buttermilk & 1 egg to the 1 cup of cornmeal and 1 tsp baking power use a hand whisk till smooth. Also I've tried reducing the buttermilk by an 1/8 and add washed & dried blueberries. 8 minutes in the skillet flip and another 3, then rest for 2 with the lid off. Perfect.

ОтветитьWe love cornbread so much. We have our traditional family recipe. You've just shown me what I've been looking for. Stove top cornbread. It gets too hot over here in the summer, and we can not use our oven. Thank you for the stove top cornbread recipe. What would happen if I used buttermilk instead of sweet milk? I sure couldn't flip my cornbread that way. I can't even flip a pancake or an egg. I'd have to turn my cornbread over with a spatula. Haha!

ОтветитьI deleted my old comment offering how I slightly modified the measurements; I've always been critical of folks who send in "their way" and I was guilty of that so with that said, I'm now offering this comment: I just made this exactly how you showed (even with the pepper) and it came out fantastic as expected; had it with a bowl of homemade chili and rice and was a perfect accompaniment. ОтветитьMy Mom did this a lot. She even made it just like she would when using the oven. No sugar I don't believe she ever used regular flour in it. When done it looked just like she's baked it. She always used self rising corn meal & self rising flour. I do too.
