Tiny trick, maybe you try it, maybe you say naw…. I save my bacon grease from oven cooked bacon. Best pork butter ever. Get you some Kerrygold butter. Let the both sit out to room temp. Use your immersion blender to whip the bajesus out of that mix. Now, you can add herbs, seasonings, or just leave plain. Freeze them in ice cube trays, pop em out, label your bag with the seasonings and you have an amazing fat to sear with, season with and finish with.
