Im from usa, they dont really do that here. Where can i see some examples of what this looks like finished?

I am planning on building a home. I would like to do a rock foundation using heavy rocks and dry stack or lime mortar. The issue is my soil is heavy clay, soft when wet and rock hard when dry. How deep should I dig the foundation below grade? I saw some other channels that say 1 meter. It does not freeze here.
